Einkorn Sourdough with Sesame Seeds (Local pick-up only)
Einkorn is an old grain. It is often lumped together with Spelt, Emmer and Khorasan and categorized as one of the "Ancient Grains". It is rich in riboflavin and carotenoids and produces a golden crumb that is dense and flavorful. We think its flavor is almost peanut buttery! The toasted sesame seeds provide more nutty crunchy bits and a long wild cultured fermentation creates a very moist, barely sour crumb. It has poor gluten forming qualities (it tends toward flat loaves if not put into a bread pan), so some folks that are sensitive to gluten seem to tolerate this grain with little difficulty.
